What Is Marbling?

Marbling is the intramuscular fat dispersed throughout a cut of beef—the small white flecks and streaks you see running through the muscle. It’s one of the most recognizable indicators of beef quality and plays a major role in how a steak eats.

As beef cooks, that intramuscular fat renders throughout the meat, contributing to the richness, juiciness, tenderness, and flavor people associate with a great steak. This is also why marbling is an important component of USDA quality grading. USDA Prime requires significantly more marbling than Choice, while Select contains less.

Why Marbling Matters

Think of marbling as flavor built directly into the steak. More importantly, great marbling isn't simply about having more fat—it's about its distribution and consistency throughout the muscle.

When Fairway evaluates beef, we're looking for characteristics like:

  • Fine, evenly distributed marbling
  • Consistency from steak to steak
  • Exceptional eating quality
  • Tenderness and juiciness
  • Rich, beef-forward flavor
  • Reliable performance for chefs

That's especially important in foodservice. A chef doesn't just need one incredible ribeye—they need the first steak and the fiftieth steak to perform consistently.

Fairway's Standard Goes Beyond the Grade

A USDA grade is the beginning of the conversation, not the end.

USDA Choice, for example, encompasses multiple degrees of marbling, while Prime begins at a substantially higher marbling threshold. That means two boxes carrying the same USDA grade can still present differently at the steak level.

That's where Fairway's sourcing philosophy comes in.

We don't buy beef simply because it meets a grade. We source for the characteristics our chefs and customers expect from Fairway.
