The process takes time and reduces the amount of beef available to sell, which helps explain why dry-aged cuts generally command a higher price.
The customer experience: Dry-aged beef can develop a more pronounced flavor, often described as deeply beefy, roasted, buttery or nutty. It’s a steak for someone who enjoys exploring flavor as much as choosing a tender cut. The exact result depends on the beef and the aging process; dry-aged does not automatically mean more tender than a comparable wet-aged steak.
