When you serve a steak, build a burger, or put beef at the center of your menu, where that beef comes from matters.
At Fairway Packing, sourcing has never been about finding the cheapest product available. It’s about relationships, consistency, traceability, and quality. For generations, we’ve built our reputation by seeking out exceptional American beef and working with trusted producers who share our standards.
And at a time when more imported beef is entering the U.S. market, we believe that commitment is more important than ever.
More Beef Is Coming From Overseas
The American beef market is changing.
Tight domestic cattle supplies and elevated beef prices have led to increased reliance on imports. In August 2026, the federal government announced an additional 300,000 metric tons of lean beef trimmings could enter the United States under an expanded tariff-rate quota. USDA has also revised its projections for U.S. beef imports upward.
For consumers and chefs, that makes one question increasingly important:
Do you know where your beef comes from?
At Fairway Packing, we do.
We Know Our Producers
Great beef doesn't begin at the cutting table. It begins long before the product ever reaches our facility.
Fairway Packing has spent decades developing relationships with trusted American farms, ranches, processors, and beef programs. We don't simply look at a commodity price and purchase whatever is available.
We look for quality.
We look for consistency.
We look for traceability.
And, most importantly, we look for partners who care about the product as much as we do.
Our sourcing philosophy has taken us directly to the farms and producers behind the beef we sell. We want to understand how cattle are raised, how products are handled, and whether those suppliers can consistently meet Fairway's specifications.
That extra level of attention is part of what separates Fairway Packing from simply buying beef on the open market.
Midwest Beef. American Quality.
Some of America's greatest cattle and beef-producing regions are right here in the Midwest and Great Plains.
Fairway has long-standing relationships with respected American beef programs and producers, including partners throughout states such as Nebraska, Kansas, South Dakota and surrounding cattle country.
These aren't anonymous cases of beef moving through a supply chain.
They're relationships we've developed because we trust the people and programs behind the product.
From USDA Choice and Prime to highly marbled specialty programs and American Wagyu, we source beef with specific standards for marbling, consistency, eating quality and performance.
Because when a chef orders a steak from Fairway, it needs to perform the way they expect it to—again and again.
Traceability Matters
Knowing where beef comes from isn't simply a marketing story. It's an important part of maintaining a consistent, dependable product.
Fairway's sourcing standards are paired with stringent handling and food-safety procedures once products arrive at our facility.
Incoming products are received, inspected and tracked before entering production. From there, our team cuts and processes products to exact specifications while maintaining the food-safety and quality-control standards our customers expect.
That means there is intention behind every step:
Trusted producer → Fairway Packing → Your kitchen or table.
It's a supply chain we're proud to stand behind.
We're Not Chasing the Cheapest Case of Beef
There will always be cheaper beef.
That's not the business we're trying to be in.
Our customers rely on Fairway because they need consistency. A steakhouse needs the ribeye it serves Friday night to perform like the ribeye it served the week before. A burger program needs the same grind, fat ratio and flavor profile every time. And a family buying steaks for dinner deserves to know they're purchasing something selected with care.
That requires being selective.
It means sometimes saying no to products that don't meet our standards—even when they're available at a better price.
For Fairway, the question isn't simply, "What does this beef cost?"
It's "Is this beef good enough to carry the Fairway name?"
Supporting the People Behind American Beef
There's another side of this commitment that matters to us.
When we source from American cattle producers and trusted domestic programs, we're supporting an enormous network of ranchers, farmers, processors, truck drivers, butchers and families whose livelihoods depend on American agriculture.
Many of these businesses are multigenerational, just like Fairway Packing.
We understand what it means to build something over decades. We understand the pride that comes from putting your family's name behind a product.
That's why we value suppliers who approach their work with that same mentality.
Quality You Can Trace. Beef You Can Trust.
Fairway Packing has been in the meat business since 1956.
Markets have changed. Technology has changed. Beef prices have changed. The way restaurants and consumers buy meat has changed.
Our standards haven't.
We will continue seeking out exceptional American beef, developing relationships with producers we trust, and carefully handling that product once it enters our facility.
Because whether we're cutting steaks for one of the country's best restaurants, grinding burgers for thousands of fans at a stadium, or preparing steaks for a family cooking dinner at home, we believe you deserve to know what's behind the beef you're eating.
Know your butcher. Know your source. Know your beef.
That's the Fairway standard.
