Our featured aged steak program is officially returning, bringing customers a new lineup of creative, extremely limited releases from our Himalayan salt dry-aging room. Each drop will combine exceptional beef with distinctive ingredients, local inspiration and the craftsmanship that has defined Fairway Packing since 1956.
First up is a release made for Detroit hockey fans:
The Hockeytown Reserve
Created in celebration of Detroit’s 101st hockey season, The Hockeytown Reserve features premium Prime bone-in ribeyes aged with Detroit Red Wings Centennial Whiskey—a Kentucky Straight Bourbon Whiskey created to commemorate a century of hockey tradition in Detroit.
Throughout the aging process, the ribeyes will develop the concentrated beef flavor and tenderness associated with dry-aged steak, complemented by the warm character of the Centennial Whiskey. The result will be a bold, deeply flavorful steak worthy of a Hockeytown celebration.
A One-Time-Only Small-Batch Release
The Hockeytown Reserve will be offered as an extremely limited, one-time-only drop. Once this small batch is gone, it will not be recreated.
Each Prime bone-in ribeye will be expertly aged inside Fairway Packing’s Himalayan salt dry-aging room before being hand-cut and prepared by our team. This is not an everyday steak—it is a special release created for collectors, steak lovers and Detroit hockey fans looking for a memorable way to celebrate the beginning of another season.
Because only a limited number of steaks are being aged, availability will be restricted and advance ordering will be strongly recommended.

Featured aged steaks have become some of the most anticipated releases at The Steak Shop. Previous small batches have explored unique combinations involving bourbon, whiskey, coffee, black garlic, espresso and other carefully selected flavors.
Their return marks the beginning of a new chapter for the program, with more limited creations planned throughout the year. Every release will offer something different, but the foundation will remain the same: exceptional beef, patient aging and precise craftsmanship.
